Pancakes - the Welsh way

We've had a go at making some pancakes for Shrove Tuesday - Welsh style - on our fire as they would have been done 180 years ago.

Crempog with Goats Curd and Honey


50g Welsh butter

250ml Milk

200ml Natural Yoghurt

275g Plain Flour

75g Caster Sugar

1 tsp Bicarbonate of Soda

2 Eggs

1 tsp Lemon Juice

450g tub Goats Curd

Jar Runny Welsh Honey



Warm the milk in a saucepan with the yoghurt and stir in the butter until melted. Sift the flour into a bowl and gradually pour in the milk mixture until combined. Beat the eggs and add the bicarbonate of soda and the lemon juice, pour this into the flour mixture to form a batter, leave to stand for half an hour.

Warm a large frying pan or griddle, grease with welsh rapeseed oil and heat until moderately hot.

Add the crempog mixture a tablespoon first ,then a half tablespoon on top to form a thick pancake around three inches in diameter and cook until bubbles form on the surface, flip over and cook on the other side until a light golden brown.

Serve warm topped with goats curd and drizzled with the honey.
